Chicken noodle soup

Really easy to make, and great for cold nights or when you're feeling a bit under the weather!

  1. 2 chicken breasts, chopped into bite-sized chunks
  2. 3 tsp fresh ginger, finely chopped
  3. 2 cloves garlic, finely chopped
  4. 1800 ml chicken stock (4 cubes)
  5. 4 spring onions, finely chopped
  6. 6 mushrooms, thinly sliced
  7. 1 large tin sweetcorn
  8. 100 g (2 nests) wheat or rice noodles
  9. 3 tsp soy sauce
  10. 2 tsp crushed chillies
  11. 2 tsp dried basil
  12. 2 tsp dried mint
  13. 1 bag prawn crackers (optional)


  1. Change

    Add the garlic, ginger and chicken chunks to the stock and bring to the boil.

  2. Change

    Once fully boiling, reduce the heat and partially cover. Leave to simmer for 25 minutes.

  3. Change

    Add the mushrooms, spring onions, sweetcorn, noodles, soy sauce, chillies, mint and basil. Stir thoroughly for 2 minutes and then let simmer for 5 more minutes.

  4. Change

    Serve and enjoy! Highly recommend a side of prawn crackers !
