Thai basil and chilli minced beef with an egg (Phat Kaphrao)

Superb Thai recipe taught to me by a friend - served with runny eggs. Traditionally pork mince, but beef mince works just as well.

Ingredients

  1. 1 cup jasmine rice
  2. 3 chillis
  3. 2 cloves garlic
  4. 250 g beef mince
  5. 1 red onion
  6. 300 g green beans or mixed greens
  7. 2 tbsp chilli paste with Thai basil
  8. 2 eggs
  9. 1/2 lime to serve

Steps

  1. Steam / boil rice as per packet instructions. I like to use brown jasmine

  2. Finely chop garlic and chilli

  3. Brown the mince in a pan and season. Remove from pan once brown and set to on side.

  4. While the mince is cooking chop the onion and beans / greens

  5. 2 table spoons of Pad Kapao (Chilli paste with Basil Leaves) found at any good Asian supermarket

  6. In the pan

  7. Mix in greens, onions, garlic and chilli. Cook till softened.

  8. Stir in the mince and more chilli paste to taste.

  9. Serve rice and top with mince mix.

  10. Quickly fry a couple of eggs
