Ingredients

  1. 1 large eggplant
  2. 2 small bell pepper
  3. 2 medium tomatoes
  4. 2 tbsp olive oil
  5. 3 tbsp plain yogurt
  6. 1 clove garlic
  7. 1 tsp dried mint
  8. to taste Salt and pepper

Cooking Instructions

    Grill eggplants, bell peppers and tomatoes in the oven or on the stove.

    Chop them finely, season with salt and pepper and mix to combine together.

    In a bowl with yogurt, add grated garlic, olive oil, dried mint, season with salt and pepper and make your yogurt –mint sauce.

    Serve this salad/dish by itself or with flat bread.
