This is a tasty and very easy dish to prepare, something like kleftiko (meat cooked in an earth oven). It can be served either as a main dish accompanied with mashed potatoes, french fries or rice or as a side dish for your buffet. Since it has a very tasty sauce I would recommend that you have plenty of bread next to your plate. It is ideal for young (who will love it) and old. And if you happen to have some dry white wine, you will enjoy it even more...

Ingredients

  1. 1600 g to 1650 g pork bites
  2. 4   tomatoes (or 5 if they are small)
  3. 3 onions or 2 large ones
  4. oil (eyeball the amount of oil, it takes about 3/4 of a cup for example or a bit less than that)
  5. salt
  6. oregano (about 2 pinches)
  7. dry white wine (about 1/4 cup)

Cooking Instructions

    Wash the pork bites thoroughly using a strainer and after you drain them -a little- place them in your baking tray. Use your hands to spread them evenly.

    Preheat your oven.

    Then cut the onions (into coarse chunks, like in a Greek salad, or in round slices which you then cut in half) and place them in the baking tray.

    Then cut the tomatoes as you would cut them for a Greek salad and place them in the baking tray as well.

    Finally cut the peppers (into either large chunks or round slices that you then cut in the middle) and add those to the baking tray as well.

    Season with salt, pepper, a pinch of oregano and mix with your hands so that all the ingredients are mixed together.

    Then, season with a little more salt and the rest of the oregano and spread the ingredients evenly in the baking tray.

    Add the wine and the oil.

    Bake on the second rack from the bottom at 170°C for about 1 1/2 hour.

    Every half hour mix all the ingredients (gently so that the sensitive ones -the tomatoes, for example- don't break apart) and continue baking.

    After 1 1/2 hour turn up the heat and place the baking tray one rack up, in the middle of the oven. Bake for about an additional 1/2 hour at 190°C until the meat gets golden brown. It is best if you mix twice at this stage, so that the meat gets golden brown on all sides. At this point you will see if it needs any water added or not.
