Pork with kefalotyri and peppers

A super easy recipe to make, with no trouble at all, ideal for a festive meal!!

Ingredients

  1. 1 kg pork cut into small pieces or portions
  2. 250 g grated kefalotyri (a Greek hard salty yellow cheese)
  3. 3-4 peppers, green
  4. 2-3 red or yellow peppers
  5. 1 can diced tomatoes
  6. salt, pepper

Steps

  1. Cut the meat into portions or small pieces and season with salt and pepper.

  2. Cut the peppers into rings.

  3. Use a baking tray with a lid or casserole dish and spread a layer of grated kefalotyri, a layer of peppers and the meat on top. Repeat with kefalotyri, then peppers.

  4. Spread the diced tomatoes on top, cover with the lid and bake covered at 200°C for about 2 hours.

  5. You don't need to add any extra water because the pork lets out its liquids.
