Cut the meat into portions or small pieces and season with salt and pepper.
Cut the peppers into rings.
Use a baking tray with a lid or casserole dish and spread a layer of grated kefalotyri, a layer of peppers and the meat on top. Repeat with kefalotyri, then peppers.
Spread the diced tomatoes on top, cover with the lid and bake covered at 200°C for about 2 hours.
You don't need to add any extra water because the pork lets out its liquids.
