Fresh mushroom salad
We got a bottle of really nice olive oil from Greece, so made this salad with some fresh vegetables. (photo shows the olive oil I used🌱🌱🌱)
Ingredients

1/2 red onion

1 tomato
-
100 g bacon
-
For the dressing:

2 tbsp olive oil
-
1 tbsp whole grain dijon mustard

1 tsp lemon juice
-
salt & pepper
Cooking Instructions

Slice the mushrooms, tomato and the onion. Cut the bacon into small pieces.

Heat oil in a pan and fry the bacon until crispy. Remove any excess grease by placing the bacon on a plate with paper towels.

Mix the bacon and the sliced vegetables in a large bowl.

Add the dressing ingredients to the bowl, and a pinch of salt & black pepper to adjust.

Mix well and serve in a large plate or a salad bowl. Enjoy!!
