I had a few odd ingredients and wanted to cook a quick & tasty heart-warming supper. I found a recipe for a prawn and potato stew. I made a couple of changes as I cooked it and it turned out totally delicious!

Ingredients

2 servings
  1. 150 g peeled, cooked prawns
  2. 500 g new potatoes
  3. 1 tin chopped tomatoes
  4. 15 g fresh Coriander
  5. Half a fat red-chilli
  6. 1 stick celery

Cooking Instructions

  1. 1

    Scrub and boil the spuds for 15 minutes

    Chop the chilli, the coriander and the celery

  3. 3

    When the potatoes are done, empty the water and chuck in the chopped chilli, chopped coriander, the chopped chilli and the tomatoes.

    Stir, bring to the boil and then simmer for 10 mins

  5. 5

    Stir in the prawns and stir for another 5 minutes

  6. 6

    Serve the stew hot, sprinkling on some more chopped coriander

  7. 7

    Enjoy with a big spoon!
