Ingredients

4 servings
  1. 6 slices smoky bacon, finely chopped
  2. 2 handfuls frozen peas
  3. 2 tbs grated Parmesan cheese (plus more to serve)
  4. 6 mushrooms, finely chopped
  5. 1 egg
  6. 200 ml double cream
  7. Pinch black pepper

Cooking Instructions

    Heat small amount of olive oil on a medium heat and fry garlic for a couple of minutes. Ensure heat not too high or the garlic will burn!

    Add the bacon and mushrooms to the pan and fry gently until bacon is cooked and crispy. Boil kettle and fill pan with boiling water. Add spaghetti to water, bring to boil with high heat and then reduce heat and leave to simmer.

    Mix 2 tbsp of Parmesan in a bowl with the egg and cream. Ensure properly mixed.

    When spaghetti is nearly done to your liking, add the frozen peas to the same pan.

    Add the cream/egg/cheese mixture to the pan with the bacon and mushrooms, and reduce the heat to low. Stir for a couple of minutes. Add salt and pepper to taste.

    Drain the pasta, mix the spaghetti with the sauce, throw on some more parmesan cheese, pour yourself a glass of wine and enjoy!
