Ingredients

8 servings
  1. 2 eggs
  2. 5.5 tsps liquid or powder stevia
  3. 1/2 cup veg oil or coconut oil
  4. 1 tsp vanilla extract
  5. 2 tbsp natural yoghurt
  6. 1 1/2 cups walnuts or mix nuts
  7. 3 ripe bananas, mashed
  8. 1 2/3 cup plain flour
  9. 1/4 tsp salt
  10. 1/2 tsp cinnamon
  11. 1 tsp bicarbonate of soda

Steps

45 -50 minutes
  1. Preheat oven to 180 degrees on conventional or 160 degrees fan forced. Line a loaf pan and set aside.

  2. Beat eggs and stevia together with a hand electric mixer for approximately 3 minutes.

  3. Add in oil. Beat until mix thoroughly. Mix in yoghurt and vanilla with the electric mixer. Add in mashed banana and mix.

  4. Add in mixed nuts. Stir with a wooden spoon.

  5. Sift together the flour, salt, bicarbonate of soda and cinnamon together in a large bowl.

  6. Pour the wet mixture into the dry mixture. Fold gently with a wooden spoon until mixed thoroughly.

  7. Pour mixture into the prepared pan and bake for 45-50mins or until a skewer inserted comes out clean

  8. Cool in pan for 10 minutes then tur. Onto wire cooling rack to cool completely.
