Chinese beef chow-mein

This tasty dish is popular in China. Chow meaning fried and mein meaning noodles. It’s a sort of stir fried dish consisting noodles, meat ( might be chicken, beef, shrimp) with vegetables such as onion, bell peppers, ….

Ingredients

  1. 100 g beef, cut into thin strips
  2. 200 g dried egg noodles
  3. 1 small yellow-orange bell peppers, cut into thin strips
  4. 2 cloves garlic, grated
  5. 1 small fresh root ginger, grated
  6. 1 large onion, peeled and cut into thin strips
  7. 2 spring onions, chopped
  8. 50 g broccoli, sliced
  9. to taste Salt- chili flakes
  10. 1 tbsp corn flour
  11. 3 tbsp sesame oil
  12. 1 tsp sugar
  13. 1 tbsp vinegar
  14. 2 tbsp soy sauce
  15. 4 tbsp sun flower oil

Steps

  1. Combine chopped beef with 1tbs of the sesame oil, corn flour, chili flakes and salt. Mix well and leave to marinate for 20 minutes.

  4. In a bowl, mix soy sauce with sugar and 1tbsp of the sesame oil. Set aside.

  7. Chop vegetables.

  8. Heat a wok over a high heat. Add oil and once oil is very hot add vegetables, grated garlic and ginger..Stir -fry for 2 minutes,

  9. Then add prepared sauce to the fried vegetables,

  10. Gently combine together and transfer to a plate.

  11. Reheat the wok. Add oil and when oil is very hot add beef slices. Stir-fry for 3 minutes.

  12. Add fired vegetables to the wok with fried beef.

  14. Cook the noodles in a pan of boiling water for 5 minutes.

  16. And fry in 1tbsp of the sesame oil for 3 minutes and set aside.

  19. Add the noodles to the beef mixture, stir-fry for 3 minutes and toss the mixture. Put on a plate garnish with chopped spring onions and serve it.
