Ingredients

  1. For the batter
  2. 100 g plain flour
  3. 1 tsp baking powder
  4. 1 pinch salt
  5. 1 teaspoon sesame oil
  6. 125 ml soda water, more if needed
  7. oil, for frying
  8. For the fish
  9. 5 tablespoons cornflour
  10. 1 large pinch white pepper
  11. 1 package cod fish
  12. For sweet and sour sauce veg
  13. 1 tbsp corn flour
  14. 2 tbsp tomato ketchup
  15. 1 tbsp brown sugar or honey
  16. 1 tbsp vinegar
  17. 1 tsp sesame oil
  18. 1 tbsp soy sauce
  19. 1-2 tbsp water
  20. Veg
  21. Carrot * Peppers * Onions * Baby corn * Broccoli * Pineapple
  22. (All cut in 2-3 cm cube)

Method

    For the batter: Mix together plain flour, baking powder and salt. Drizzle in sesame oil and gradually add soda water or water, whisking constantly until you get a smooth batter. The consistency should be similar to cream. Let sit for at least 30 minutes.

    Fill a deep pan or wok with oil and slowly heat to medium heat.

    For the fish: In a large dish, mix together cornflour and white pepper. Dust the cut up chunk fish in the seasoned cornflour then dip into the batter evenly coating each piece. Transfer to the hot oil and fry until golden and the fish is cooked about 4 to 5 minutes. Scoop out with a slotted spoon, drain on kitchen towels and enjoy with sweet and sour

    Sweet and sour fish balls. First make the sace by placing the sugar, cornflour, vinegar, soy sauce and tomato ketchup in a bowl. Mix well.

    Stir fry the onion, carrot, baby corn and pepper for a few minutes. Add the sweet pea and broccoli and stir-fry until all vegetables are just cooked.

    3. Add the sauce mixture, crispy fish balls and pineapples and cook until thick for a couple of minutes. Serve with boiled rice
