Mega-chocolatey cherry and Amaretto brownies

A mish-mash of a Bristol Bites recipe and @Richard Hiscutt's mega chocolate brownie recipe, with an extra splash of Amaretto for good measure!

Ingredients

40 minutes
20 servings
  1. 225 g unsalted butter
  2. 100 g milk chocolate, chopped into pieces
  3. 450 g caster sugar
  4. 110 g plain flour
  5. 4 large eggs
  6. 200 g glacé cherries, halved
  7. 100 ml Amaretto

Cooking Instructions

    Turn the oven on to fan 160C/conventional 180C/gas 4 and grease and/or line a 30cm by 20cm tin

    Cut all of the butter into small cubes and tip into a large pan. Melt over a low heat and stir in the sugar

  3. 3

    Remove from the heat and stir in the dark chocolate, allowing it to melt fully into the mixture

    Add the flour, cocoa powder and eggs and mix thoroughly

  5. 5

    Add the cherries and amaretto. If it takes your fancy, maybe you "accidentally" spill an extra splash of that amaretto into the mixture...

    Add the milk chocolate pieces, stir really well and then pour the mixture into the tin

  7. 7

    Bake for 35-40 minutes. You'll know they're done by popping a skewer into the centre and it coming out clean

    Leave to cool fully before cutting into slices
