Andalusian Gazpacho

This is the traditional recipe for the Andalusian gazpacho. However, I found that by adding some carrots you get a better texture and colour. Your five a day!!!
Ingredients

1 Kg tomatoes

2 onions
-
1 cucumber
-
3-5 garlic cloves
-
1 pepper
-
Half tea spoon of cumin
-
100 ml olive oil
-
50 ml balsamic vinegar
-
Water as required

1 pinch salt
-
5 carrots (optional)
Cooking Instructions

As simple as mixing and blending until smooth. It is recomended to let it chill in the fridge for a few hours. Serve it chilled!!
