Bread sandwich with sardines fried in eggs

I try to treat myself to some Saturday morning deserved breakfast even though I had to raid the kitchen pantry to come up with this idea but I enjoyed it

  1. 4 slices bread
  2. 1 tin sardine
  3. 2 eggs
  4. 1 tbsp veg oil
  5. 1 tsp black pepper
  6. 1/2 small onion diced

    Heat up frying pan and once the pan is hot, add veg oil and after 30seconds add the diced onions stir

  2. Add Photo

    Add the sardine and mash it in the pan, add black pepper and stir, after 2 minutes

  3. Add Photo

    Break the eggs into a bowl and whisk and pour it over the fried sardine and stir till its cooked through

  4. Add Photo

    Turn off the heat and spread the sardine egg sauce over the slice bread and serve
