Vickys Quick Chicken Tikka Masala, GF DF EF SF NF

A quick version of a classic dish. You can marinate the chicken in the curry paste overnight for an even more flavourful dish if you have time

  1. 2 tbsp vegetable oil
  2. 2 onions, chopped
  3. 4 chicken breasts, diced into bitesize pieces
  4. 4 tbsp tikka curry paste - you can buy this from any store (UK Pataks Korma paste jars are free-from)
  5. 4 tbsp tomato paste / concentrated puree
  6. 800 grams tinned chopped tomatoes
  7. 300 ml coconut milk
  8. 2 tbsp mango chutney or use sugar to taste
  9. rice and naan bread to serve

  1. Change

    Heat the oil in a pan and fry off the onion until softened

  2. Change

    Add the chicken and stir until browned

  3. Change

    Stir the curry paste and tomato paste together to coat the chicken well and let cook to season for a couple of minutes

  4. Change

    Stir in the chopped tomatoes and coconut milk and let simmer gently for 15 minutes then stir through the chutney / sugar and some chopped fresh coriander if you like

    Serve with rice and naan bread
