This a simple cake to prepare at home as it does not require an elecric mixer and ingredients are easily available.
The secret to have it moist use vegetable oil as opposed to butter. Avoid using oils that have scents such as olive oil you may end up not liking it.

Ingredients

  1. 2 cups flour
  2. 2 tspns baking soda
  3. 2 tspns cinnamon ground
  4. 1 tspn salt
  5. 1/2 cup vegetable oil
  6. 1/2 cup butter milk
  7. 1/2 cup sugar
  8. 1/2 cup honey
  9. 3 eggs
  10. 2 tspns vanilla extract
  11. 2 cups carrots finely grated

Cooking Instructions

    Sift your flour add Baking soda, cinnamon and salt and whisk them well to ensure they are well mixed.

    In another bowl. Add vegetable oil and sugar and honey beat well untill it gets creamy. You dont need an elecric mixer for this, use your hand mixer and whisk well.

    Beat your egg add vanilla extract. Then add egg to the mixture. Add your eggs one by one. And beat them well.

    You can make butter milk at home by adding a teaspoon of vinegar or lemon juice to milk.

    Add your butter milk and whisk well, add flour in small bits incorporate it well using a spatula.

    Add your carrots and incorporate them fully.

    Pour the batter in your already greased baking tin. Add some rasings randomly.

    Bake for 40 to 50 minutes in 180 degrees preheated oven. Always good to preheat your oven to desired degrees.

    To check if its fully cooked insert a knife and if it comes out clean voila your cake is ready
