Chicken and Ginger Rice

The simplest of dinners

  1. Half a chicken breast
  2. 5 button mushrooms
  3. 2 cloves garlic
  4. 1/3 finger of ginger
  5. Salt(adjust as necessary)
  6. Pepper(adjust as necessary
  7. Half a lemon
  8. 1 Tsp Paprika
  9. Half Tsp Chilli Flakes
  10. 50 ml Olive Oil
  11. Bunch Spinach
  12. Bunch coriander leaves


  1. Start boiling your rice first, since that will take the longest to cook, lightly salt your water

  2. Cut the ginger and the garlic(minced). As well as the mushrooms and the chicken(slices). Finely chop the spinach and the coriander

  3. Heat the pan with the oil inside. Once hot add the paprika, chilli flakes, garlic and ginger

  4. Add you mushrooms and mix thoroughly. Let it cook for five mins on medium heat.

  5. Add the chicken. Mix thoroughly.

  6. Once the rice is ready, add it to the frying pan, making sure to do folding stirs to really combine the flavours.

  7. Add the spinach and the coriander and continue doing folding stirs to mix the flavours. Do this until half wilted

  8. Kill the Heat, squeeze the lemon into the rice and stir to equally distribute the flavour of the lemon.

  9. Plate up and eat
