A really simple salsa we have as part of a Mexican inspired vegetarian lunch sometimes. You could add chillis to this for a bit of heat too.

Ingredients

8 portions
  1. 3 x 200g tins of sweet corn
  2. 1 x Red pepper
  3. 1 x medium Red onion
  4. 1 x 432g tin of chopped pineapple
  5. 1 big handful of fresh coriander
  6. 3 limes
  7. to taste Salt

Steps

  1. Drain the corn

  3. Chop the onion and pepper

  4. Finely chop the coriander

  5. Put the chopped and drained ingredients in a large container

  6. Roll the fresh limes under the palm of your hand to loosen their juices, slice in half or quarters and squeeze over the mixture
