‘What’ve we got in’ curry

Snow day: raiding the fridge!
Ingredients

800 g chicken thighs

250 g frozen diced onion

5 cm ginger chopped finely

400 g tin of chopped tomatoes

2 tsp Garam masala
-
1 tsp coriander
-
2 tsp cumin
-
3 cardamom pods
-
200 g Greek yoghurt
-
Salt and pepper
-
2 chicken stock cubes
-
1 tsp sugar
-
1-2 tsp chilli powder
Cooking Instructions

Add onion to 1 tbsp oil. Fry 10 min on medium heat. Add chilli, ginger and garlic.

Add chicken (diced into 2cm cubes)

Add tinned tomatoes, seasoning and spices. Put lid on pan and cook on medium heat for 10-15min until reduced.

Add yoghurt and stir in

Taste and add seasoning as required

Serve with rice and daal
