Quick Chicken and cashew nut stir fry

#quick, #tasty, #healthy - Takes you to Thailand in your kitchen (Without the beautiful beaches, or crystal clear waters or rickshaws or a relaxed pace of life - Actually doesn’t take you to Thailand at all, just tastes good :-P)

  1. 200 g Chicken
  2. 1 white onion
  3. 1 red pepper
  4. 4 tbsp cashew nut
  5. 2 spring onions
  6. 2 Cloves garlic
  7. 6 dried chillies
  8. 1 tbsp Oyster sauce
  9. 1 tbsp Fish sauce
  10. 2 tsp Roasted chilli paste
  11. 1/2 tsp sugar
  12. 3 tbsp Chicken stock
  13. 1 tbsp oil


  1. Change

    Cube chicken, de-seed pepper, chop veg into large chunks. Crush and finely chop garlic.

  2. Change

    Heat oil in a wok over medium high heat. Add garlic and fry until turning brown (10-30 seconds)

  3. Change

    Add the chicken. Cook until sealed.

  4. Change

    Add oyster sauce, fish sauce and chilli paste.

  5. Change

    Stir fry on medium heat until the chicken starts to brown

  6. Change

    Mix in the sugar.

  7. Change

    Mix in the chicken stock (dry). At this point the chicken should still be moist. Add a dash of water so that there is some liquid in the bottom of the pan. This will make your sauce and keep the chicken moist. Lower the heat and cook for two minutes until the Chicken is cooked through

  8. Change

    Add vegetables. Bring the heat back up to medium.

  9. Change

    Stir fry until everything is piping hot.

  10. Change

    Add cashews and dry chilis. Cook for one minute more. Plate up and serve with rice!
