Souffle Pancake
Ingredients

3 Egg

15 g (5 tsp) Granulated Sugar

20 ml (2 tbsp) Milk

10 ml (1 tbsp) Vegetable oil

30 g (3 tbsp) All purpose Flour

1/3 tsp Baking Powder

pinch Salt
-
1/4 tsp Vanilla Paste
Cooking Instructions

Split Egg yolk and Egg white

Whisk the 5g (1 tsp) Sugar with the Egg yolk

Add the Milk and Oil in 3 increments while mixing

Sieve the Flour and Baking powder and mix well

Add the Salt and Vanilla Paste and mix well

Whisk the Egg white until formy

Add half of Sugar and whisk until Sugar is desolved

Add the remaining of Sugar and whisk until stiff peaks form

Add the Meringue to the batter in 3 increments and mix gently

Preheat Pan on very low heat

Grease the pan slightly with Vegetable oil

Pour batter into pancake shape (x3). Put lid on to maintain heat

Flip when bottom side is coloured
