Chicken chorizo bake

With tomatoes and red wine. 10min prep and 50min cooking time.

  1. 650 g cherry tomatoes
  2. 200 g chorizo
  3. 300 g chicken breast
  4. half a garlic bulb
  5. 2 tbsp olive oil
  6. 1 tbsp balsamic vinegar
  7. 125 ml red wine
  8. 1.5 tsp sugar
  9. 1.5 handfuls fresh basil
  10. 0.75 handful fresh flat parsley
  11. Serve with rice or garlic bread
  12. to taste Salt and pepper
  13. 350 g baked potato (optional)
  14. 1 Tsp crushed chillis (optional)


  1. Preheat oven to 180C

  2. Cut chicken into large chunks and place into an oven dish with 1tbsp of olive oil. Crush garlic cloves with flat edge of knife and place into oven dish. Season with salt and pepper.

  3. Cut chorizo into 1-2cm slices and place into dish with torn basil. If using potato, cut into small cubes and add to dish.

  4. Add tomatoes, some chopped some whole into dish. Add sugar, red wine, 1tbsp of olive oil and balsamic vinegar. Add chilli if desired.

  5. Place into oven for 50minutes, tossing half way through. Prepare rice or garlic bread.

  6. Remove from oven and rest for 5 minutes

  7. Serve with parsley and basil and enjoy!
