I had some small onions from #seasonsupply this week and some leftover shallots so I decided to try making pickled onions....
Put the onions in a bowl
Cover with boiling water from the kettle
After a minute rinse under cold water... then fill the bowl with cold water...
Peal the onions if you need a knife use stainless steel so they don’t go brown
Cover the onions in salt to drive out some of the moisture that can dilute the vinegar I left them like this overnight in the fridge
Wash the jar and then dry out in the oven for 15 mins at 120 Degrees
Fill the jar with onions and cover with the vinegar
Put in the dark cupboard for at least a few weeks, ideally till Xmas 🎄
