This dish is my mother’s favourite, because she hasn’t had dosa this way. The tanginess of the bhurji and the crispiness of the dosa make for a delicious breakfast! This is also a hit with kids! A good source of energy and proteins for an active morning!
Serving suggestions: sambar, red chilli chutney, coconut chutney, mint chutney.

Ingredients

40-45 mins
1-3 dosas
  1. 1 cup finely chopped onions
  2. 1 cup finely chopped capsicum
  3. 100 gms grated paneer (cottage cheese)
  4. 1 tomato
  5. 1 tsp ginger garlic paste
  6. 1 tsp tamarind juice
  7. Pinch asaefotida
  8. 2 tsp red chilli powder
  9. 2 tsp salt or as required
  10. 1 tsp sugar
  11. 1 tsp turmeric powder
  12. 1 tsp garam masala
  13. 1/2 cup water
  14. 3 cups dosa batter
  15. for frying Oil

Cooking Instructions

    Finely chop the onion, capsicum. Grate the paneer.

    Sauté in a tsp of oil the onion and capsicum until they turn transluscent.

  3. 3

    Add in 1 tbsp of the purée made from tomato, tamarind, asafoetida, sugar, ginger garlic paste, tamarind juice, salt and chilli powder.

    Add the salt, chilli powder, turmeric and garam masala as per taste.

    Add the grated paneer to this and mix well. Pour in the water cover and cook for 5 mins or until uncooked chilli powder smell disappears.

    Pour the dosa batter on to a dosa pan as thin as possible. Pour oli around the margins of dosa. When one side is cooked flip over and cook on other side.

    Spread 2-3 tsps of the paneer bhurji on to one side, avoiding the edges and let it get soaked into the dosa. Fold dosa in half and flip over to fry a few times until both sides brown.

    Remove from pan. Serve dosa with some cheese sauce, sambar, mint chutney or chilli chutney!
