My Chicken Spinach Curry

Ingredients

  1. 3 chicken bteasts chopped into cubes
  2. 2 tbls Butter
  3. 1 Large Onion diced
  4. 3 cloves crushed Garlic
  5. 1/2 tsp Red Dried Chilli
  6. 2 tbls Dried fenugreek
  7. 1 tbls Garam Masala powder
  8. 1/2 tsp dried cumin
  9. Handful Spinach
  10. 1 tsp Tumeric
  11. Handful fresh corriander
  12. 1 tbls Tomato puree
  13. 2 cups chicken stock boiling
  14. 1 tbls Curry powder
  15. 1 tbls Chutney
  16. 1/2 cup yogurt
  17. Cornflour to thicken

Cooking Instructions

    Melt the butter

  2. 2

    Add the onions and fry until opaque in colour

  3. 3

    Then add the Garlic and chicken, fry until coloured for about 15 minutes

  4. 4

    Add the cumin, tumeric,chilli,garam masala, spinach, curry powder and chutney, stir quickly to mix then add the chicken stock stir in and turn down to low and simmer for 15 minutes

    Add the tomato puree stir in let it simmer for another 5 minutes take off the heat let it cool a little and add the yogurt and cornflour if needed to be thicker.

    Serve hot

I only started experimenting with herbs and spices and items I had never heard of before through joining Cookpad 2014 and I'm still learning new things. It is a passion of mine and I always invite my family around so I can create something new for them to try. my children grew up learning lots from me I have 3 daughters all with their own families and two Sons one who cooks for his family also my youngest son who is still at home with me,he comes up with some lovely meals and ideas so I'm proud of them all. 💜
