Simple bacon and mushroom rice

Ingredients

4 servings
  1. 300 g rice
  2. 1 onion chopped
  3. 1 red pepper chopped
  4. 1 garlic clove crushed
  5. 8 slices bacon chopped
  6. 1 tin sweetcorn
  7. 1 teaspoon dried parsley
  8. I spoonfull of chicken stock
  9. Salt and pepper
  10. 1 punnet mushrooms chopped

Cooking Instructions

    Cook rice in 600ml of water add chicken stock and parsley and salt to taste

    Fry bacon for a few minutes then add the onion, cook that for a few minutes then add the peppers, mushrooms and crushed garlic

    Turn down heat and cook while the rice is cooking. Add ground pepper to taste.

    Add rice to the mixture and add sweet corn. And sprinkle a little bit more parsley

  5. 5

    Serve with fresh bread

There's no mention of how much mushroom to use in the ingredients!
