Roasted Beer Chicken

Very simple recipe. You can choose to either roast it or stew it. You can prepare it differently by frying the garlic first in olive oil. I just chose to place everything in a roasting dish and pop it in the oven.

Ingredients

  1. 8 chicken pieces
  2. 1 onion soup mix sachet
  3. 330 ml beer
  4. 3 medium potatoes, peeled and diced
  5. 1 large onion, peeled and cut
  6. 2 garlic cloves, peeled and roughly cut
  7. Olive oil or margarine (as you like)
  8. Chilli flakes to taste (optional)
  9. Fresh coriander or dried parsley
  10. to taste Salt

Cooking Instructions

    Preheat oven to 220c.

    Using a large casserole dish with a lid add all the ingredients expect for the coriander as that's only for sprinkling at the end.

    Transfer dish to oven and cook for 60-70 minutes. Stick a fork in a potato to see if its soft, if so it's cooked and you can remove it from oven. To be honest I never really did keep track of the time but normally takes about an hour for chicken to cook.

    To serve sprinkle with the chopped coriander or dried parsley.
