Inspired by ‘Cooked’ by Michael Pollan, tonight I took my time making a bolognese. It’s ‘only’ 90 minutes, but the extra time really makes a big difference to the taste. Seasonal veg from #seasonsupply

Ingredients

  1. 400 g mince beef
  2. Olive oil
  3. Sauce part-1
  4. 3 onions
  5. 3 sticks celery
  6. 2 cloves garlic
  7. Olive oil
  8. Sauce part-2
  9. 800 g chopped tomatoes
  10. to taste Salt & pepper
  11. 1/4 bottle red wine
  12. Serve with
  13. 360 g pasta

Cooking Instructions

  1. 1

Add a splash of olive oil to a large frying pan. Brown the meat. Move into a bowl when done, leaving fat and any burnt bits in the pan.

  2. 2

Very finely chop carrots, celery, garlic and onions.

  3. 3

Add some more oil to the pan and fry the vegetables for 30 minutes until very soft. Keep them on a low enough heat so they don’t brown.

  4. 4

Add the wine to the pan and cook at a high heat until the wine is evaporated

  5. 5

Add chopped tomatoes, meat and some salt to season. Cook for 30 minutes on a low heat, so the sauce is just simmering.

  6. 6

Add small amounts of water to the sauce if it starts to dry out too much.

  7. 7

With 10 minutes to go, start cooking the pasta (adjust time to match packet instructions)

  8. 8

Serve all together, with Parmesan on top! Enjoy :) 👨‍🍳
