Ingredients

  1. 225 g pasta
  2. 4 cloves garlic
  3. 200 courgette or other squash
  4. 225 g smoked tofu
  5. 250 ml soya cream
  6. 1 tablespoon bouillon powder
  7. 2 tablespoons nutritional yeast
  8. 40 g peas
  9. Handful spinach

Cooking Instructions

    Cook the pasta as per the instructions.

    Chop your garlic and onions and get those going over a medium heat.

  3. 3

    In the meantime cut up your squash.

  4. 4

    Once your garlic and onion are starting to brown add your squash and cook for a few more minutes.

    Cut the tofu block in to cubes and add to the pan.

  6. 6

    Add the soya cream, stock and nutritional yeast. Lower the heat and this point as you’re gonna want the squash to cook in the creamy sauce.

    When the squash is tender, add the peas and spinach.
