Cauliflower and Spinach Daal

Home made chipatis and daal, made with Izzy on a lazy Sunday.

This amount of ingredients made a lot of food! So half if it’s too much!

Ingredients

8 servings
  1. 1 Can Chickpeas
  2. 1 Cauliflower
  3. 1 Sweet potato
  4. Half a bag of Spinach
  5. Handful Apricots
  6. Cherry tomatoes, halved
  7. 500 g Red pulse lentils
  8. 1 can coconut milk
  9. Coriander seeds
  10. Cayenne pepper
  11. 4 little red onions
  12. 5 cloves garlic
  13. 1 inch ginger
  14. Coriander stalks + leaves
  15. jar Lime pickle
  16. Yoghurt
  17. Fresh lime

Steps

  1. Chop everything up and place the onions, garlic, ginger and spices into the pot first

  2. Then add chopped cauliflower and sweet potato

  3. Then the coconut milk and some extra water. As well as the lentils.

  4. Pour the other ingredients in after the other veg is softened and let the pot sit for around 20 mins simmering. Or until the lentils are cooked.

  5. Serve with coriander, yoghurt and lime pickle.

  6. We also made some chipatis (Paul Hollywood’s recipe is very easy!)
