Chicken fajitas

Ingredients

4 servings
  1. 1 Red pepper
  2. 1 Medium red onion
  3. 2 Chicken breasts
  4. 1 Tsp Smoked Paprika
  5. 1 small pinch ground cumin
  6. 2 Limes
  7. Black pepper
  8. 2 Pitas
  9. Fat-free natural yogurt to replace creme fraiche
  10. 50 g Grated mozzarella cheese
  11. 1/2 chili pepper
  12. 15 Cherry tomatoes
  13. Fresh coriander
  14. Sea salt
  15. Black pepper
  16. 1 Lime
  17. Olive oil
  18. 1 Handful Cherry tomatoes
  19. Half a chili
  20. Fresh coriander
  21. 1 Ripe avocado
  22. 1 Lime

Method

    Add Photo

    Cut pepper into thin strips and slice the onion. Slice your chicken lengthways into long strips. Put the peppers, onion, and chicken into a bowl with the paprika and cumin. Squeeze over the juice of half a lime, add olive oil, season with black pepper and mix. Marinate for 5 minutes while making the salsa.

    Finely chop chilli. Roughly chop your tomatoes and the coriander. Put the chilli and tomatoes into a bowl with salt and black pepper and the juice of 1 lime, then stir in your chopped coriander.

    Start frying the pepper, onion and chicken mix and keep turning.

    For guacamole, squeeze a handful of cherry tomatoes onto a board. Finely chop ½ red chilli and some coriander leaves. Crush avocado. Adjust flavours if needed.

    Warm your pitas in the toaster.

    Once everything is done, pile the fajitas with the sauces, and add some grated mozzarella cheese on top.
