Ingredients

6 servings
  1. 1 egg
  2. 1/2 cup sugar
  3. 1/3 cup oil
  4. 1 tsp vanilla extract
  5. 1 all-purpose-flour
  6. 1 tsp cinnamon
  7. 1/4 tsp baking soda
  8. 1 tsp baking powder
  9. 1 pinch salt
  10. 1 cup grated pumpkin
  11. As required Buttercream frosting or any frosting Chocolate chip cookies
  12. As required Chocolate sprinkles or any sprinkles

Cooking Instructions

    Preheat oven to 180°C and prepare a cupcake pan with liners.

    In a large bowl add egg, sugar, oil and vanilla.

    Beat for a minute and then add flour, cinnamon, baking powder, baking soda and salt.

    Beat for a minute, then add pumpkin and stir to combine, (Do not to over mix!).​

    Fill cupcake tins about 2/3 full. Bake at 180°C for 18-20 minutes or until golden brown.

    Remove from oven and allow to cool completely before frosting and decorate.
