Hawkers Inspired Curry

This curry was inspired by hawkers Asian steeet fare curry that is their signature curry sauce. I totally shot from the hip creating this recipe so feel free to adjust. I only use about a cup of the sauce and store the rest for later, or freeze it.
Ingredients

For the sauce:

14 oz Unsweetened coconut cream

1/2 cup tahini (or natural peanut butter)

1/2 cup tamarind liquid concentrate

3 tbsp soy sauce

2 1/2 tbsp chili oil

1 tbsp yellow curry powder

1 tsp graham marsala
-
2 tbsp rice wine vinn
-
2 tsp ground ginger
-
3 tbsp dark brown sugar

2 tbsp mirin
-
The rest:
-
2 tbsp minced garlic
-
3 tbsp grated yellow onion
-
10 oz wood ear mushrooms
-
1 cup diced chicken breast
-
Bell pepper chopped
-
Cilantro (fine chopped)
