Ingredients

  1. 1 lb Shrimp
  2. 4 Tomatoes (Diced)
  3. 2-3 Cloves Garlic
  4. 4 tbsp olive oil
  5. 1/4 cup italian parsley or basil (Chopped)
  6. 1 tsp salt
  7. 1/2 tsp red pepper flakes (optional)
  8. Artisan Rolls

Cooking Instructions

    Dice tomatoes, chop italian parsley, chop garlic, and cut shrimp into small pieces.

    Combine tomatoes, parsley, balsamic vinegar, red pepper, salt, and 2 tbsp of olive oil in a bowl; set aside.

    Heat 1 tbsp of olive oil in a pan. When it is hot enough for cooking, put the shrimp in the pan and cook until done.

    Drain the juices from the pan, then add the last tbsp of olive oil and garlic. Cook for about 5 minutes.

    Add the shrimp and garlic from the pan to the bowl with the tomatoes and other ingredients; mix well.

    Toast the artisan rolls. Once toasted, place the shrimp bruschetta mixture on top and serve.
