Non-Dairy Brown Rice Amazake Strawberry Yogurt

This is a standard macrobiotic tofu yogurt dessert.
I made a manageable amount for my family using home-made brown rice amazake.

The amounts of brown rice amazake and strawberries are estimates.
You can make a delicious version of this recipe with blueberries too.
Pour on some maple syrup over this yogurt before serving for some extra sweetness.

Ingredients

  1. 1/2 block Tofu
  2. 125 grams Brown rice amazake
  3. 1/2 bag Strawberries (frozen are ok)
  4. 1 tbsp Lemon juice
  5. 1 pinch Salt
  6. 1 Strawberries and mint for decoration

Cooking Instructions

    Lightly boil and drain the tofu and add it to a food processor along with the brown rice amazake. Blend until smooth.

    Once the mixture is creamy, add the strawberries and blend again.

  3. 3

    Add the lemon juice and salt to get your desired taste and mix again to finish.

  4. 4

    Transfer to serving dishes and chill Spruce up your yogurt cups by decorating with strawberries and mint if you like.
