Non-Dairy Brown Rice Amazake Strawberry Yogurt
This is a standard macrobiotic tofu yogurt dessert.
I made a manageable amount for my family using home-made brown rice amazake.
The amounts of brown rice amazake and strawberries are estimates.
You can make a delicious version of this recipe with blueberries too.
Pour on some maple syrup over this yogurt before serving for some extra sweetness.
This yogurt doesn't keep very well so please eat it the day you make it or the day after. Recipe by Piyonofu
Ingredients

1/2 block Tofu

125 grams Brown rice amazake

1/2 bag Strawberries (frozen are ok)

1 tbsp Lemon juice

1 pinch Salt

1 Strawberries and mint for decoration
Cooking Instructions

Lightly boil and drain the tofu and add it to a food processor along with the brown rice amazake. Blend until smooth.

Once the mixture is creamy, add the strawberries and blend again.

Add the lemon juice and salt to get your desired taste and mix again to finish.

Transfer to serving dishes and chill Spruce up your yogurt cups by decorating with strawberries and mint if you like.
