Mapo Doufu

This is a standard mapo doufu.

Please adjust the doubanjiang to taste. Recipe by Eiyoushino recipe



  1. 1 block Tofu
  2. 150 grams Ground pork
  3. 1 clove Garlic
  4. 1 dash Ginger
  5. 1/2 Japanese leek
  6. 2 tsp Doubanjiang
  7. 1/2 tbsp ●Chicken soup stock granules
  8. 1 tbsp ●Soy sauce
  9. 1/2 tbsp ●Sugar
  10. 1 tbsp ●Tianmianjiang
  11. 2 tbsp ●Sake (or Shaoxing wine)
  12. 250 ml ●Water
  13. 1 Katakuriko slurry
  14. 1 tbsp Sesame oil


  1. Edit

    Heat the oil in a frying pan and add the minced garlic, ginger, and Japanese leek and stir-fry. Add the pork and stir-fry until the color changes.

    Add the doubanjiang to taste and continue stir-frying.

    Add the ● seasonings and let it come to a boil.

    Add the tofu and simmer a bit.

    Add the katakuriko slurry to thicken the sauce. Add the sesame oil and Japanese leek and serve.
