Winter Melon Salad
Since it's summer, I was craving lightly flavored food full of nutrition.
There's nothing much to it, but I recommend you drain the winter melon pretty well. For 4 servings. Recipe by YUMIKOMUGI.
Ingredients

1/8 Winter melon

4 slice Ham

1 Egg

1/2 Bell peppers or 1/4 each of red and yellow paprika peppers

1 tbsp Mentsuyu

3 tbsp plus Mayonnaise

Peel the winter melon and remove the seeds and insides, then julienne the flesh. Sprinkle salt (unlisted) and set it aside for 10 minutes.

Julienne the bell peppers. Beat the eggs and cook over heat or microwave to make a quick omelet (It doesn't have to be perfect). Place the ham over the omelet and slice them both thinly.

Rinse the winter melon with water to wash off the salt. Squeeze thoroughly to drain excess water. Combine with the mixed ingredients from Step 2.

Mix with mentsuyu sauce and mayonnaise to serve.
