Southwest breakfast lasagna



  1. 1 container egg beaters
  2. 1 cup low fat half and half
  3. 4 cheddar jalapeño tortillas
  4. 1 package low fat shredded cheddar jack cheese
  5. 18 turkey sausage links (precooked and diced)
  6. 2 packages diced ham
  7. 1/2 onion (diced)
  8. 1 green bell pepper (diced)
  9. 1 red bell pepper (diced)
  10. 1/2 package mushrooms (diced)


  1. Change

    Spray a large baking dish we'll place 2 tortillas on bottom

  2. Change

    Combine egg beaters with 1 cup of low fat half and half

  3. Change

    Combine onions, peppers, mushrooms, ham and sausage in a large mixing bowl

  4. Change

    Place half of mix for 1st layer

  5. Change

    Pour half of egg mixture distribute evenly

  6. Change

    Cover with half of cheese

  7. Change

    Repeat process for 2nd layer

  8. Change

    Cover bake for 1 hr at 375

  9. Change

    Divide up into servings mine was 8. Add low fat sour cream or plain Greek yogurt with salsa or pico de gallo

  10. Change

    MFP info for 1/8 of this large casserole very filling
