Ingredients

  1. 1 bunch dinosaur kale
  2. 1 bunch collard greens
  3. 4 large burdock root
  4. 4 stalks celery, chopped
  5. 2 large carrots, sliced
  6. 2 parsley root, sliced
  7. 1 clump of enoki mushroom
  8. 1 large leak, sliced
  9. 10 whole peppercorn
  10. 70 gr fresh ginger root
  11. 70 gr fresh turmeric
  12. 4 cloves garlic
  13. 1 tb soy sauce
  14. 10 fresh spring onions
  15. 1 bunch parsley leaves, chopped

Steps

35 minutes
  1. Wash the black kale, chop it up.

  2. Wash the collard greens, chop it up.

  3. Wash, peal and slice the burdock root. Soak in a bowl of water and change the water ones or twice.

  4. Peal, wash and chop the remaining veggies.

  5. Clean the ginger root and fresh turmeric, garlic and vitamix them with water. Add all ingredients but mushroom, green onions and parsley leaves to a pot. Add water or veggie stock, spices. Bring to a boil, reduce heat, cover and simmer for 15 minutes.

  6. Chop of the enoki's dirty ends, wash thoroughly.

  7. Add the clean enoki mushroom at the end, cook it for 2-3 minutes. We are done!

  8. Serve garnished with freshly chopped parsley leaves and green onions. Enjoy!
