Here is a quick simple delicious lunch or light dinner. Crisp lettuce holds a slightly spicy shrimp salad filled with fresh vegetables/
Ingredients

1/3 .cup mayonnaise

1 tablespoons sriracha sauce

1/2 tablespoon tamari soy sauce

1 teaspoon seasoned rice vinegat

1/4 teaspoon black pepper and salt to taste

For Shrimp Salad

1 pound cooked peeled and deveined shrimp

1 cup peeled cucumber, sliced into half rounds

1/4 cup chopped celery
-
2 tablespoons thinly sliced sweet onion

1/2 cup cherry tomatoes

Chopped fresh parsley for garnish
Cooking Instructions

Combine all sauce ingredients and whisk to blend

In a large bowl combine shrimp and salad ingredients

Add sauce, as much as needed to moisten and fold in
