Carrot and Apple Salad

Julienne apple and carrot with yoghurt dressing. I like to have this fruity and crunchy summer salad with baked chicken, grilled salmon, fresh greens, sandwiches and so on. I used cottage cheese this time but I also like it with feta cheese on top!

Ingredients

  1. 1 apple, julienne
  2. 1 Tbsp lemon juice
  3. 1 carrot, julienne
  4. (for dressing)
  5. 1/4 cup (60 ml) plain greek yoghurt
  6. 2 Tbsp white wine vinegar
  7. 1 tsp honey
  8. 1/2 tsp nutmeg (optional)
  9. 1/2 tsp dried dill
  10. to taste salt and pepper
  11. (on top)
  12. 3 Tbsp cottage cheese
  13. 2 Tbsp dried sweetened cranberries
  14. 2 Tbsp unsalted walnut, chopped

  1. Place the lemon juice in a mixing bowl. Core and julienne the apple into matchsticks. Put them into the bowl and toss with lemon juice.

  2. Peel and cut the carrot into matchsticks, and combine with the apple in the bowl.

  3. Then make a dressing. Combine yoghurt, vinegar, honey, salt and pepper (and herbs/spices if you use) in a small bowl.

  4. Mix all ingredients in step 2 and 3 together. Use a big enough bowl to combine well. Sprinkle cottage cheese, walnuts and cranberries on top.

  5. Refrigerate for 1 hour. Serve chilled.
