Ingredients

4-6 servings
  1. 1 pound shrimp
  2. 2 pounds sweet potatoes diced
  3. 8 ounces Chorizo sausage
  4. 1 teaspoon salt
  5. 4 large eggs
  6. 1/2 large red bell pepper diced
  7. 1 small red onion diced
  8. 1/2 teaspoon ground black pepper
  9. 1 tablespoon extra Virgin olive oil
  10. to taste salt for eggs
  11. to taste ground black pepper for eggs
  12. 1/2 cup evaporated milk
  13. 2 cup grated extra sharp cheddar cheese
  14. 2 tablespoons flour

Cooking Instructions

    Preheat the oven 400 degrees Fahrenheit

  2. 2

    Cook the sausage in a pan. When done remove.

  3. 3

    Add 1 tablespoon extra Virgin olive oil to pan add the onion, potatoes, and peppers.

    Cook till onions are soft.

  5. 5

    Add the shrimp and stir. Keep on heat for 5 minutes. Add flour and cook 3 minutes then stir in milk.

    Smooth it out

    Add cheese

  8. 8

    Carefully add the eggs, salt and pepper to taste, on top and put into oven till egg whites are done. I broke a yoke so I added an egg.

    I baked in oven for about 15 minutes
