Ingredients

  1. 2 Cups - Tomatoes (Cherry Tomatoes are preferred)
  2. 2 - Cucumbers
  3. 1 - Avocado
  4. 4 oz - Feta Cheese
  5. 2 T - Red Onion
  6. 2 T - Parsley
  7. 2 T - Olive Oil
  8. 1 T - Red Wine Vinegar
  9. to Taste Salt and Pepper

Method

  1. Edit

    Chop tomatoes into a medium dice. If using cherry tomatoes, cut in half. Add to a bowl.

  2. Edit

    Peel cucumber and dice. Add to bowl.

  3. Edit

    Remove pit, dice avocado and using a spoon scoop out the avocado from the peel. Add to bowl.

  4. Edit

    Cube feta and add to bowl.

  5. Edit

    Add minced red onion and minced parsley to bowl.

  6. Edit

    Whisk together olive oil, red wine vinegar and black pepper – pour over salad.

  7. Edit

    Toss gently so the feta and avocado don’t break up. Serve immediately. Enjoy!
