Spinach with rice (spanakorizo)

Ingredients

  1. 1 kg fresh spinach
  2. 1/2 cup short grain white rice, or Arborio rice suitable for risotto
  3. 1/2 bunch parsley, chopped
  4. 1 cup oil
  5. 1 bunch dill, finely chopped
  6. I small onion, finely chopped
  7. 1 bunch spring onions
  8. 1 cup white wine
  9. salt
  10. lemon juice (optional)

Cooking Instructions

    Wash the spinach well, and blanch for 1-2 minutes in boiling water.  Drain of excess water very well.

    In a pot, sauté the onion and spring onions in the oil.

    Add the parsley, dill, spinach and sauté gently, finishing off with the wine.  When the wine has evaporated, add a little water and season with salt and pepper.

    Bring to boil, add the rice, and let simmer over low heat for approximately 20 minutes.
