Kachumber or Cachumba salad is a cool fresh Indian salad, ideal to serve as a side dish to complement the heat of spicy curry or on it's own with poppadoms. Dead easy to make - even more so if you don't want to peel the tomatoes, but I prefer to take the skin off when I make it. The recipe should include a green chile, but when I am making it to have with curry I leave the chile out. And finally the recipe should be with lime rather than lemon, but yesterday I didn't have any limes, so used lemon instead and it worked fine.

Ingredients

  1. 1 small cucumber (or half a normal one)
  2. 3 tomatoes
  3. 1 salad onion
  4. 1 green chile
  5. 1 bunch fresh coriander
  6. 1 lemon
  7. Salt and pepper

Cooking Instructions

    Chop the onion, cucumber and coriander and put them in a bowl. If you are using chile, seed and chop it and add too

    Plunge the tomatoes in boiling water for 30 seconds to loosen the skin

  3. 3

    While they are in the water squeese the lemon juice over the other ingredients

    Peel the tomatoes with your fingers and chop (usually kachumber recipes recommend seeding the tomatoes, but I never do)

    Add the tomatoes to the salad.

    Stir well, add salt and pepper, stir again and leave to sit for half an hour before serving. Enjoy!

Born in the UK. Came to Spain on finishing Uni many many moons and meals ago, and I'm still here. For me cooking is a great way to unwind at the end of the day. I don't usually have much time my recipes tend to be quite quick and simple and (mostly!!) healthy too. Also quite seasonal because I prefer buying fresh local produce as much as possible. However sometimes, when I do have more time, I like to spend a few hours making more time-consuming recipes and filling my kitchen with delicious smells and great music.
