Banana Oat Bars

I came across this recipe and thought it was perfect for an occasional sweet treat in my kids lunchboxes or for after school. They are soft and dense, reminiscent of banana bread but with the portability of a granola bar. If you choose not to put in the chocolate chips, then increase the walnuts to 1/2 cup (and vice versa). Recipe adapted from :



  1. 2 large spotty bananas, mashed
  2. 1 cup old fashioned rolled oats
  3. 1/2 cup peanut butter (or other nut/seed butter)
  4. 1/4 cup honey or maple syrup
  5. 1 large egg, at room temperature
  6. 2 tbsp. ground flaxseed (optional)
  7. 1 tsp. vanilla extract
  8. 1 tsp. ground cinnamon
  9. 1/2 tsp. baking soda
  10. 1/4 cup coarsely chopped walnuts
  11. 1/4 cup dark chocolate chips (optional)


  1. Add Photo

    Preheat the oven to 375°F. Line an 8x8" baking pan with parchment paper, leaving an overhang to easily lift out the finished bars. Set aside.

    In a bowl, combine all of the ingredients. Mix together until combined.

    Pour into the prepared pan and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

    Allow to cool completely, then cut into bars and serve. Store remaining bars in an airtight container for 3-4 days.
