Toffee Fruit Chip Cookies

I was given some Dove chocolate covered cherries, blueberries and cranberries. They were delicious! I started thinking how to use them in recipes and this was my first experiment with them. The cookies came out chewy, fruity and so good!

Ingredients

  1. 2 cup all-purpose flour
  2. 3/4 tsp baking soda
  3. 1/2 tsp salt
  4. 3/4 cup unsalted butter, at room temperature
  5. 1 cup light brown sugar, packed
  6. 1 large egg
  7. 1 large egg yolk
  8. 1 tsp vanilla extract
  9. 8 oz toffee bits, I used heath toffee bits
  10. 2 cup chocolate covered fruit, I used Dove brand chocolate covered cherries, blueberries and cranberries

Cooking Instructions

    Preheat oven to 325. Line baking sheets with parchment paper

    Whisk flour, baking soda and salt in a medium bowl

    In a large bowl beat butter and both sugars until light and fluffy, add egg, egg yolk and vanilla and beat in

    Add flour mixture and stir just until blended

    Fold in toffee and chocolate covered fruit

  6. 6

    Roll into 1 1/2 inch balls. Place 2 inches apart on parchment lined cookie sheets. Flatten balls slightly with the palm of your hand. Bake 10 to 14 minutes until must golden. Don't overbake for chewy cookies Let sit on baking pan 5 minutes then transfer to wire rack

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
