Crock pot Guinness Stew

I wanted to recreate the stew I had in Ireland. It took a few tries but I got it down! Enjoy!

  1. 2 tbsp butter
  2. 2 lb chuck stewing beef, 1 in. cubes
  3. 1 large onion, chopped
  4. 1 cup celery, chopped
  5. 2 large carrots, peeled, chopped
  6. 1 turnip, peeled, chopped
  7. 1 parsnip, peeled, chopped
  8. 2 red potatoes, peeled, chopped
  9. 2 tbsp tomato paste
  10. 1 pints Guinness Extra Stout
  11. 3 cup beef broth
  12. 2 tsp dried thyme
  13. 1 clove garlic
  14. 2 bay leaves
  15. dash worcestershire sauce
  16. salt

  1. Heat butter in large sauté pan. Brown beef in butter.

  2. Sprinkle salt over beef as it browns.

  3. Transfer into crock pot once beef is browned.

  4. Add celery, onions, and garlic to pan you used to brown the beef. Sauté for 5 minutes.

  5. Add tomato paste and a splash of Guinness and mix well.

  6. Transfer celery and onions to crock pot.

  7. Add the rest of the Guinness, beef broth, carrots, turnips, parsnips, potatoes, bay leaves, and thyme to crock pot.

  8. Cover and cook on high for 4 hours.

  9. When done, add salt to taste and a dash of Worcestershire sauce.

  10. If you want, add a dollop of mash potatoes in the center of your bowl.
