Colorado Pork Green Chili

When we make this, we go big! I make five times the regular recipe and freeze it in quart jars. Even then, it doesn't last long around here! Serving options: pour over burritos, mix with cheese for chip dip, add to scrambled eggs or omelettes. (One serving equals 6 oz.)

  1. 1 lb pork (diced)
  2. 1/2 cup olive oil (or oil of your choice)
  3. 6 clove garlic (or 6 tsp garlic powder)
  4. 1/2 cup flour
  5. 1 tsp salt
  6. 28 oz can whole peeled tomatoes
  7. 24 oz frozen green chilies
  8. 4 oz can diced jalapenos
  9. 6 cup water
  10. 1/2 cup chicken stock

  12. 1/2 cup water
  13. 2 tbsp flour

  1. Heat the oil on high in a large sauce pot. Brown the pork in the oil until golden brown.

  2. Add the minced garlic to the pork, lower heat to medium and cook for 5 minutes.

  3. Add the flour to the pork and brown slightly.

  4. Put the tomatoes in a blender and pulse until smooth.

  5. Add tomatoes, thawed green chilies, jalepenos, water, and chicken stock to the pork mixture. Bring to a boil and then simmer on medium low for 15 minutes (or longer if you want the pork to become really tender).

  6. Mix the 2 tablespoons of flour into 1/2 cup of cold water. Add to boiling green chili and allow to thicken for a few minutes.

  7. Serve over burritos.
