Banana-Rice-Pecan Delight! No Flour Dessert

I am not eating wheat these days, but had a bunch of bananas that were soft. I used to make banana nut bread with them, but couldn't now, so I experimented with what I had in the kitchen. I was pleasantly surprised. Hope you are too!!

Ingredients

  1. 2 cup Cooked Rice
  2. 1 cup Sugar
  3. 2 tsp Cinnamom
  4. 1/4 cup Milk
  5. 1 cup Chopped Pecans
  6. *Optional - Cool whip or vanilla ice cream.

Cooking Instructions

    Mash 1-1/2 bananas.

    Mix bananas with rice.

  3. 3

    Add milk, sugar and cinnamon.

  4. 4

    Mix well.

  5. 5

    Pour mixture into square casserole dish.

    Slice remaining bananas and put onto top of mixture.

    Add the 20 chocolate chips.

    Add the chopped pecans across top.

    Cover dish with foil and bake at 325°F for 30 minutes.

    Remove foil and cool 15 minutes.

    Serve in small bowls.

    Add cool whip or ice cream on top if dessert if desired.
